(Serves six)
2 tbs olive oil
2 tbs unsalted
butter
1 sweet onion,
sliced
2 garlic cloves,
chopped
4 Mandarin cross
tomatoes (or any
sweet orange
tomato),chopped
salt and pepper
to taste
1 pint chicken
stock
1/4 cup basil leaves
In a large soup pot over medium heat, add oil, butter, onion
and garlic, and cook until the onion is soft and translucent.
Add the tomatoes and season lightly with salt and pepper.
Cook until tomatoes are completely covered in their
own juice. Add the stock and basil and bring to a boil.
Reduce to a simmer and cook for 45 minutes. Remove basil
leaves and transfer in batches to a blender; blend until smooth.
Strain to remove any leftover clumpy elements and season to
taste. Serve warm.
