(serves four to six)
11/2 cups flour
31/2 tsps baking powder
3/4 tsp salt
2 tbsps sugar
1 egg, beaten
13/4 cups milk
3 tbsps melted butter
1. Combine flour, baking powder,
salt and sugar in a large bowl.
2. Combine egg, milk and butter in a
separate bowl. Add to the flour
mixture and beat until smooth.
3. Drop 1/4-cup spoonfuls onto a very
hot griddle.
4. Cook until the top of the pancake
is full of bubbles, then flip and cook
the other side.
5. Serve with butter and syrup.
