(Serves 4)
Salt
1 pound capellini (angel hair pasta)
2/3 cup extra virgin olive oil
4 large cloves garlic, chopped
1 1/4 teaspoons red pepper flakes
1 cup bottled clam juice
3 dozen littleneck clams, scrubbed
1. Bring a large pot of salted water to a boil. Add
the capellini and cook according to the
package instructions. Drain.
2. Meanwhile, in a large pot, heat the olive oil
until hot but not smoking. Add the garlic
and red pepper flakes and cook until the garlic is a
deep golden brown. Add the clam juice and bring
to a rolling boil.
3. Add the clams to the pot, cover and cook just
until the clams open, about 2 1/2 minutes.
4. Toss the capellini with the clam mixture.
Taste, and adjust the seasoning if necessary.
